Our Chardonnay was hand-picked by our friends and family from Woodside and gently pressed in whole bunches immediately after it was picked. A cool and wet year made it especially important to sort and select the fruit, leaving us with a single barrel of Juice. After fermentation, the wine was carefully stirred every 2 weeks to help build the wine's texture, build on and develop the citrus driven fruit profile, and to incorporate notes of pear and stone fruits.
